250g vermicelli egg noodles
100g butter
4 eggs
200g caster sugar
1 teaspoon pure vanilla extract
pinch salt
500g cottage cheese
Preheat the oven to gas mark 3/170C.
Cook the noodles and set aside. Melt the butter and let it cool slightly.
Beat the eggs.
Combine the warm or cooled, but not hot, melted butter with the sugar, vanilla, eggs, salt and cottage cheese. Add the noodles and mix well.
Pour into baking tray and bake for about 65 minutes until the top is just golden where the buttery threads of pasta have caught in the heat. Let cool a little before cutting and serving.
